First Time?

Having been called the Best Comfort Food In Waco, Roni’s Mac Bar offers a fun experience you can’t find anywhere else. Located right beside the Magnolia Silos, you can get Build-Your-Own Mac n Cheese/Grilled Cheese, where you watch us make it and bake it right in front of you. Our goal is to have the most fun food in Waco!

Our regulars range from little princesses to tattooed bikers. So if you’re looking for kids food, or wanting to take a break from touring the many Waco attractions, check us out in Union Hall.

The founders are a local duo, Frank and Mary Senese. They have had years of experience in the restaurant business, and finally decided that it was time to open their own. It was a gamble – opening a non-traditional restaurant in the middle of a pandemic seemed risky, and it was.

Frank and Mary put everything they had (financially and emotionally) into opening their first location, hoping their efforts weren’t going to waste on something that would have major consequences if all failed.

The first recipes and systems were cooked up by trial-and-error, for better and for worse. Bowls came out cold, cheese tasted weak, and portions were’t right. Following our tagline of “Think Outside The Box”, they worked tirelessly to always be improving the experience.

That was when some major changes happened.

The recipe was completely re-engineered to enhance flavor and consistency.

Portions were corrected to give the best meal possible.

The bowls would now be mixed + baked, in between layers of cheese.

Shortly after, a video of the restaurant went viral, and Roni’s Mac Bar was on the map! Frank and Mary couldn’t be more moved by the positive response that the community has given them, especially after all of the work that went into engineering the brand into what it is.

Roni’s now has a large and constantly growing following, allowing us to find out what our fans want the most, and make the experience something everyone can love!

Though our specialty is Mac n Cheese, when you add in the different cheese options, and so many other toppings, the possibilities are huge! Over 33 MILLION combinations to be exact (We did the math)

With Mac n Cheese treated like an entree in my upbringing from the north, and Mary’s southern cooking style and love for the Mac, Roni’s Mac Bar was born! Pop by our locations and ask if either of us are around, we love to chat with our guests!

Texas BBQ was good!
Great flavor from brisket and the mac was firm and cheesy.

Kind staff members, they helped me choose from a wide selection of options for their Mac and Cheese.
The BBQ (From the Texas BBQ menu) was my favorite. I received a grand helping of macaroni topped with delicious brisket, queso blanc and had the choice of adding unlimited veggies that I liked.
(I chose the nacho jalapenos and added a sprinkle of parmesan)

The server also gave me a generous amount of BBQ sauce on top to complete the dish and the overall experience was pretty decent. I even got to speak to the owner for a moment.
